Bastard! Black Edition white
12.50€Volume: 12,5% Colour: Pale gold with shiny highlights. Viticulture: Vineyards with a density of 4,200 plants/ha, planted on predominantly clay-limestone soils. This terroir provides an exceptional balance between the freshness and maturity of the grape varieties, creating a wine of great complexity and structure. Harvest: It takes place between the end of August and mid-October, with a selective manual harvest to ensure that the grapes reach their full ripeness potential. Vinification: After total destemming, the grapes are gently pressed and fermentation takes place in stainless steel tanks, with strict temperature control between 10ºC and 12ºC, preserving all the purity of the varietal aromas. This wine is aged for 8 months on fine lees to acquire a creamy, enveloping texture. In addition, 35% of the blend was aged in first and second year French oak barrels, giving it subtle notes of vanilla and spice. Flavour: Elegant and complex, with an impressive aromatic depth. Notes of ripe citrus fruit, such as grapefruit and lemon, are accompanied by delicate layers of peach and apricot. Ageing in wood adds refined touches of vanilla, toasted almonds and a slight smokiness. Palate: Full-bodied and sophisticated, with a creamy texture that envelops the palate. Stone fruit flavours such as peach and nectarine harmonise with citrus nuances and a touch of minerality, reflecting the influence of the clay-limestone soil. The acidity is vibrant, balanced by soft spicy notes and a slight toastiness from the barrel ageing, giving it a remarkable complexity. End of race: Long and enveloping, leaving a silky, fresh sensation, with delicate notes of vanilla and a mineral touch that lingers, inviting you to take another sip. Harmonisation: Perfect to accompany refined seafood dishes such as grilled lobster or sautéed scallops, but it also stands out alongside roast fish with butter sauce, game birds or creamy risotto dishes. Ideal for special moments or celebrations, it is a wine that complements a sophisticated meal with elegance and distinction. Capacity: 75cl
