Bastard! Black Edition white
12.50€Volume: 13% Soils: Schist Colour: Straw with greenish tinge VinificationThe grapes arrive at the winery in the morning, when the temperature is at its lowest, and are placed in the pneumatic press. The pressing cycles are long with low pressures, allowing careful extractions for a rich must. Decanting is shorter than usual, which helps maintain the complexity of the medium. Fermentation takes place in new 550-litre French oak barrels in a temperature-controlled cellar at 18ºC InternshipsThe wine is aged in French oak barrels for about 6 months on the lees, accompanied by batonnage, to integrate the wood and the wine, increasing its creaminess and depth. After filling, it remained in the bottle for 6 months, during which time it underwent controlled maturation to promote the characteristic complexity of this wine Flavour: On the nose we can sense a very intense and complex aroma, with white fruits such as melon and apple and some vegetal notes of green shrubs standing out Taste: In the mouth, it reveals great balance and harmony and good volume, with fruity and mineral flavours once again present End of race: The finish is long and balanced HarmonisationPerfect for celebrating life. This wine goes well with fatty, roasted or grilled fish, white meats, charcuterie and sheep's milk cheeses. Temperature: 10-12 ºC Capacity : 75 cl
